Ingredients
- 3 medium russet potatoes
- 1–2 tablespoons olive oil
- 2 tablespoons butter (softened)
- 2 cups shredded cheddar cheese (divided)
- 1 cup sour cream
- 2 slices cooked bacon (crumbled)
Instructions
- Wash and dry the potatoes. Brush with olive oil and sprinkle with salt; poke holes with a fork.
- Preheat the air fryer to 400ºF (204ºC). Cook potatoes for 30 minutes, flipping halfway.
- Cool, then slice in half and scoop out the insides, leaving some flesh in the skins.
