  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping the outside in tin foil and greasing it lightly.
  3. In a mixing bowl, combine graham crumbs, brown sugar, cinnamon, and melted butter for the crust; press into the bottom of the pan.
  4. For the apple filling, peel and slice apples, then mix with brown sugar and cinnamon; set aside.
  5. In another bowl, beat cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until just combined.
  6. Layer half the cheesecake mixture over the crust, then add the apple filling followed by remaining cheesecake mixture.
  7. Bake in a water bath for about 60 minutes or until set; cool gradually in the oven before chilling in the refrigerator for at least 4 hours.
