Description

Ingredients

  • 2 large baking potatoes
  • 1 block (200g) feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup fresh basil

Instructions

  1. Preheat your oven to 200C | 390F.
  2. Wash and cube the potatoes, then par-boil them in water for 6-8 minutes. Drain and let steam dry.
  3. In a baking dish, toss the par-boiled potatoes with olive oil, thyme, oregano, salt, pepper, and chili flakes.
  4. Roast for about 30 to 40 minutes until golden brown.
  5. Add the feta cheese to the center of the dish and squeeze half a lemon over it.
  6. Roast for an additional 15 minutes after removing the garlic head from the dish.
  7. Squeeze out the roasted garlic into the potatoes and mix in lemon juice and chopped basil.
  8. Drizzle honey over the potatoes before serving.
