  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1/2-inch chunks; chop onion into 1-inch pieces.
  3. On a lined sheet pan, combine sweet potatoes and onions with olive oil, garlic powder, chipotle powder, and half of the salt. Toss well.
  4. Bake for 20 minutes.
  5. Add broccoli florets to the pan; toss with olive oil and remaining salt. Place chicken breasts in the center and brush with BBQ sauce.
  6. Bake for an additional 15–20 minutes until chicken is cooked through.
  7. Shred chicken in the pan using two forks and mix with remaining BBQ sauce.
  8. Serve immediately in bowls with roasted vegetables.
