  • 2 ears corn (husks and silk removed)
  • 1 head romaine (shredded)
  • 1 1/2 cups cherry tomatoes (halved)
  • 1 cup canned black beans (rinsed and drained)

  • 1/2 cup diced red onion
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. In a bowl, mix chicken, oil, BBQ seasoning, salt, and pepper. Grill the chicken on medium-high heat until cooked through (165°F), about 6-8 minutes.
  2. Grill corn until charred; cool before cutting off kernels.
