  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef with onion and garlic until browned; drain excess fat.
  3. Stir in enchilada sauce, diced tomatoes, black beans, cumin, chili powder, salt, and pepper. Let simmer for 5 minutes.
  4. Assemble the casserole: Layer 4 tortillas on the bottom of the baking dish, add half of the beef mixture and half of both cheeses; repeat layers.
  5. Bake for about 25 minutes until bubbly and golden brown.
