  • 1 1/3 cups + 2 tablespoons water
  • 2 teaspoons fine sea salt
  • 4 cups + 2 tablespoons bread flour

Instructions

  1. Prepare the Starter Mixture: Combine 2 teaspoons sourdough starter, 3 tablespoons all-purpose flour, and 5 teaspoons water in a mixing bowl. Stir well and let sit at room temperature for about 8 hours or overnight.
  2. Mix the Dough: In a large bowl, add the prepared starter mixture with 1/4 cup active sourdough starter, 1 1/3 cups + 2 tablespoons water, and 2 teaspoons fine sea salt. Gradually mix in 4 cups + 2 tablespoons bread flour until fully incorporated.
  3. Knead the Dough: Transfer dough to a floured surface and knead for about 10 minutes until smooth and elastic.
  4. First Rise: Place dough in a lightly greased bowl. Cover with a kitchen towel and let rise at room temperature for about 4 hours or until doubled in size.
  5. Shape the Dough: Gently deflate dough on a floured surface and shape it into your desired loaf form.
  6. Second Rise: Place shaped dough on parchment paper, cover again with a towel, and let rise for another 30-60 minutes.
  7. Preheat Oven & Bake: Preheat oven to 450°F (230°C). If using a Dutch oven, place it inside to heat up as well. Transfer dough into the hot Dutch oven or onto the baking sheet and bake for about 50 minutes until golden brown.
