  • 1 large egg

  • 1 (10 oz.) bag peanut butter chips
  • 1/4 cup granulated sugar
  • flaky sea salt (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream together cold unsalted butter, brown sugar, and granulated sugar until smooth.
  4. Add in the egg, egg yolk, vanilla extract, and mix until combined.
  5. Gradually incorporate the dry ingredients on low speed until fully mixed.
  6. Fold in the peanut butter chips evenly.
  7. Use a cookie scoop to form dough balls and roll them in granulated sugar before placing them on the baking sheets.
