  • 2 Tbsp Dark Soy Sauce
  • 4 Cups Cooked Jasmine/Basmati Rice (refrigerated)
  • 1 Cup Small/Medium Shrimp (cleaned and deveined)
  • 1 Tbsp Vegetable Oil
  • 2 Small Eggs
  • 1 Cup Frozen Peas and Carrots
  • Minced Ginger and Garlic

Instructions

  1. Prepare the rice by soaking it for at least an hour before cooking. Refrigerate overnight for best results.
  2. In a bowl, mix brown sugar, sesame oil, dark soy sauce, and white pepper powder; set aside.
  3. Whisk eggs with salt and white pepper; set aside.
  4. Marinate shrimp with half of the sauce mix; cook in butter until pink and set aside.
  5. Scramble eggs in the same pan; set aside.
  6. Sauté garlic and ginger in remaining butter and oil until fragrant.
  7. Add onions followed by frozen peas and carrots until soft.
  8. Stir in refrigerated rice, cooked shrimp, scrambled eggs, and remaining sauce mix until heated through.
