  • ⅓ cup white onion, chopped
  • 1 jalapeño, finely chopped
  • 2 15 oz cans of black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • 2 Tbsp hot sauce
  • 6 large tortillas (burrito size)
  • 6 tostadas
  • 6 small fajita size tortillas (to close the wrap)
  • ⅓ cup sour cream
  • 1½ cup cheese, shredded
  • 1½ cup romaine, shredded
  • ½ cup salsa (optional)
  • 1 avocado, sliced thin (optional)
  • 2 Tbsp cilantro, chopped

Instructions

  1. Prepare all ingredients by chopping vegetables and rinsing beans.
  2. Heat olive oil in a skillet over medium heat, then sauté onions until translucent.
  3. Stir in garlic powder, chili powder, paprika, cumin, salt, black beans, tomato, jalapeños, and hot sauce; cook for 5 minutes.
  4. Lay a large tortilla flat and spoon the bean mixture into the center. Add cheese, sour cream, lettuce, avocado (if desired), and top with a tostada.
  5. Fold the edges of the tortilla over the filling to enclose it completely. Layer with a small tortilla on top.
  6. Cook in a skillet until golden brown on both sides.
