Ingredients
- 10–11 strips cooked bacon
- 2 heads broccoli (about 1.5 pounds)
- 1 cup dried cranberries
- 1/3 cup roasted sunflower seeds
- 1 cup shredded cheddar cheese
- 1/3 cup chopped red onion
- 1 & 1/4 cups Miracle Whip OR mayonnaise
- 1 lemon zest
- 1 tablespoon lemon juice
- 2 tablespoons white wine vinegar
- 1/4 cup sugar
- 1 & 1/4 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dry mustard
- 1/8 teaspoon cayenne pepper
Instructions
- Preheat oven to 400°F (200°C). Arrange bacon on a baking sheet and bake until crispy (about 15 minutes). Cool and chop into pieces.
- In a large mixing bowl, whisk together mayonnaise or Miracle Whip, lemon zest, lemon juice, white wine vinegar, sugar, kosher salt, black pepper, dry mustard, and cayenne pepper until smooth.
- Chop broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, cheddar cheese, red onion, and most of the bacon (reserve some for topping).
- Mix everything thoroughly until well combined. Chill before serving if desired.
