  • 1011 strips cooked bacon
  • 2 heads broccoli (about 1.5 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip OR mayonnaise
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons white wine vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat oven to 400°F (200°C). Arrange bacon on a baking sheet and bake until crispy (about 15 minutes). Cool and chop into pieces.
  2. In a large mixing bowl, whisk together mayonnaise or Miracle Whip, lemon zest, lemon juice, white wine vinegar, sugar, kosher salt, black pepper, dry mustard, and cayenne pepper until smooth.
  3. Chop broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, cheddar cheese, red onion, and most of the bacon (reserve some for topping).
  4. Mix everything thoroughly until well combined. Chill before serving if desired.
