- ⅓ cup diced red onions
- ⅓ cup dried cranberries

- 3 tablespoons mayonnaise (regular or vegan)
- 1 ½ tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
- 1 teaspoon maple syrup or honey
- 1 garlic clove
- ¼ teaspoon sea salt (more to taste)
- ½ cup almonds
- ½ cup pepitas (pumpkin seeds)
- 1 tablespoon tamari
- ½ teaspoon maple syrup
- ¼ teaspoon smoked paprika (more to taste)
- 2 tablespoons fresh parsley (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Toss almonds and pepitas with tamari, maple syrup, and smoked paprika. Spread on a baking sheet and bake for 10-14 minutes until golden brown. Let cool.
- In a large bowl, whisk together olive oil, mayonnaise, apple cider vinegar, Dijon mustard, maple syrup or honey, minced garlic, and sea salt.
- Add chopped broccoli, diced red onions, and dried cranberries to the dressing. Toss gently to combine.
- Mix in roasted almonds and pepitas before serving.
