  • 1 pound broccoli crowns
  • ⅓ cup diced red onions
  • ⅓ cup dried cranberries
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons mayonnaise (regular or vegan)
  • 1 ½ tablespoons apple cider vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon maple syrup or honey
  • 1 garlic clove
  • ¼ teaspoon sea salt (more to taste)
  • ½ cup almonds
  • ½ cup pepitas (pumpkin seeds)
  • 1 tablespoon tamari
  • ½ teaspoon maple syrup
  • ¼ teaspoon smoked paprika (more to taste)
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Toss almonds and pepitas with tamari, maple syrup, and smoked paprika. Spread on a baking sheet and bake for 10-14 minutes until golden brown. Let cool.
  2. In a large bowl, whisk together olive oil, mayonnaise, apple cider vinegar, Dijon mustard, maple syrup or honey, minced garlic, and sea salt.
  3. Add chopped broccoli, diced red onions, and dried cranberries to the dressing. Toss gently to combine.
  4. Mix in roasted almonds and pepitas before serving.
