  • 2 ½ tablespoons oil
  • 2 pounds chuck steak, cubed
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 large tomatoes, diced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups beef broth

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and cook until translucent (about 3-4 minutes). Stir in minced garlic and cook for another minute.
  2. Add cubed chuck steak to the pot and brown on all sides.
  3. Stir in chopped bell peppers and cook for a couple of minutes until softened.
  4. Mix in tomato paste and diced tomatoes; cook for an additional 3 minutes.
  5. Sprinkle flour over the mixture; stir well and cook for another minute.
  6. Pour in beef broth, along with salt, black pepper, cumin, and chili powder. Bring to a boil then reduce heat to low.
  7. Cover the pot and let simmer on low heat for about 2 hours until meat is tender.
