  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F and line a jelly roll pan with parchment paper.
  2. In one bowl, mix flour, baking powder, baking soda, salt, and spices. In another bowl, whisk eggs and combine with sugar, oil, and vanilla.
  3. Combine dry ingredients into wet ingredients until just mixed; fold in shredded carrots.
  4. Spread batter into the pan and bake for 10–13 minutes until set.
  5. Roll the warm cake with parchment paper; cool for about 10 minutes.
  6. Beat cream cheese and butter until smooth; add powdered sugar and vanilla.
  7. Unroll the cooled cake gently; spread frosting on top, then re-roll tightly.
  8. Wrap in plastic wrap and chill before slicing.
