  • 1/2 cup (122 g) canned pumpkin puree
  • 1 3/4 cups (219 g) all purpose flour, spooned and leveled
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, cream softened butter with granulated and light brown sugars until fluffy.
  4. Mix in egg yolks, vanilla extract, and pumpkin puree until well combined.
  5. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet.
  7. Bake for 12 minutes until edges are lightly golden; cool on wire racks.
