  • 1 quart (32 oz) chicken stock
  • 4 cups shredded cooked chicken
  • 2 cups all-purpose flour
  • 1 tablespoon, plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional)
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a Dutch oven, melt butter over medium-high heat. Add onion, carrots, and celery; cook for 5 minutes until softened. Stir in garlic.
  2. Mix in flour and cook for another minute. Gradually add evaporated milk and chicken stock while stirring to avoid lumps.
  3. Add shredded chicken (or raw chicken with an extra cup of broth). Simmer until cooked through, about 20 minutes if using raw chicken.
  4. For dumplings, combine flour, baking powder, salt, thyme; stir in milk and melted butter until just combined.
  5. Drop spoonfuls of dumpling batter into the simmering soup. Cover tightly and steam for about 15 minutes without lifting the lid.
