- 2½ cups chicken broth
- 1¼ cups white long-grain rice (uncooked)
- 2 cups fresh broccoli florets (uncooked)
- 10.5 oz condensed cream of chicken soup
- ½ cup milk
- ½ cup sour cream
- 2 cups shredded cheddar cheese (divided)
- 1 cup crushed Ritz crackers
Instructions
- Preheat your oven to 350°F (175°C).
- Cut chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper.
- In a large pot over medium heat, melt butter and cook chicken until golden brown. Remove from pot.
- Add chicken broth, olive oil, and rice to the pot; bring to a boil. Reduce heat, cover, and simmer for 6 minutes.
- Stir in broccoli; cover again and cook for an additional 9 minutes until rice is tender.
- Combine cooked ingredients with cream of chicken soup, milk, sour cream, half the cheddar cheese, and cooked chicken in the pot.
- Transfer mixture to a greased casserole dish; top with remaining cheddar cheese and bake covered for 15 minutes.
- Mix crushed Ritz crackers with melted butter; sprinkle over casserole and bake uncovered for an additional 10 minutes until golden brown.
