  • 2 boneless, skinless chicken breasts (or 2 cups diced rotisserie chicken)
  • 2½ cups chicken broth
  • 1¼ cups white long-grain rice (uncooked)
  • 2 cups fresh broccoli florets (uncooked)
  • 10.5 oz condensed cream of chicken soup
  • ½ cup milk
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup crushed Ritz crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut chicken into bite-sized pieces, season with Italian seasoning, salt, and pepper.
  3. In a large pot over medium heat, melt butter and cook chicken until golden brown. Remove from pot.
  4. Add chicken broth, olive oil, and rice to the pot; bring to a boil. Reduce heat, cover, and simmer for 6 minutes.
  5. Stir in broccoli; cover again and cook for an additional 9 minutes until rice is tender.
  6. Combine cooked ingredients with cream of chicken soup, milk, sour cream, half the cheddar cheese, and cooked chicken in the pot.
  7. Transfer mixture to a greased casserole dish; top with remaining cheddar cheese and bake covered for 15 minutes.
  8. Mix crushed Ritz crackers with melted butter; sprinkle over casserole and bake uncovered for an additional 10 minutes until golden brown.
