  • 1 1/4 lbs chicken breast
  • 1/4 cup all-purpose flour
  • 2 Tbsp olive oil
  • 1 Tbsp unsalted butter
  • 8 oz brown button mushrooms
  • 3/4 cup dry marsala wine
  • 3/4 cup reduced-sodium chicken stock
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Cut chicken breasts in half lengthwise and pound to 1/3" thickness. Season with salt and pepper, then dredge in flour.
  2. In a large pan over medium heat, cook the chicken in olive oil and butter until golden brown (about 3–4 minutes per side). Remove and keep warm.
  3. Sauté mushrooms in the same pan until browned. Add garlic and onion powder; cook briefly.
  4. Pour marsala wine into the pan, scraping up any browned bits. Add chicken stock and cream; simmer until thickened.
  5. Return chicken to the pan, spoon sauce over it, and heat through before serving.
