Ingredients
- 1 1/4 lbs chicken breast
- 1/4 cup all-purpose flour
- 2 Tbsp olive oil
- 1 Tbsp unsalted butter
- 8 oz brown button mushrooms
- 3/4 cup dry marsala wine
- 3/4 cup reduced-sodium chicken stock
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
- Cut chicken breasts in half lengthwise and pound to 1/3" thickness. Season with salt and pepper, then dredge in flour.
- In a large pan over medium heat, cook the chicken in olive oil and butter until golden brown (about 3–4 minutes per side). Remove and keep warm.
- Sauté mushrooms in the same pan until browned. Add garlic and onion powder; cook briefly.
- Pour marsala wine into the pan, scraping up any browned bits. Add chicken stock and cream; simmer until thickened.
- Return chicken to the pan, spoon sauce over it, and heat through before serving.
