  • Salt and pepper
  • ½ cup flour
  • ¼ cup finely grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 tablespoon salted butter
  • ½ cup dry white wine
  • 4 cloves garlic, thinly sliced
  • 2 tablespoons capers
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • Fresh parsley for garnish

Instructions

  1. Pound chicken breasts to about ½ inch thick and season with salt and pepper.
  2. Combine flour, Parmesan cheese, and garlic powder in a shallow bowl; dredge chicken in this mixture.
  3. Heat olive oil in a frying pan over medium-high heat; cook chicken for 4-5 minutes on each side until golden brown. Remove from pan.
  4. In the same pan, melt butter, add garlic, and sauté until fragrant. Pour in white wine and scrape up browned bits.
  5. Add capers, chicken broth, and lemon juice; simmer for about 5 minutes.
  6. Return chicken to the pan; simmer for an additional 3-4 minutes until heated through. Stir in cold butter before serving.
  7. Serve over pasta or rice, garnished with fresh parsley.
