  • 1 serrano pepper, diced
  • 1.5 pounds boneless, skinless chicken thighs
  • 4 garlic cloves, minced

  • 23 tablespoons curry powder
  • 1 can crushed tomatoes (14.5 oz)
  • 1.5 pounds sweet potatoes, cubed
  • 1 can coconut milk (13.5 oz)
  • 3 cups baby spinach

Instructions

  1. Heat coconut oil in a large sauté pan over medium-high heat. Add diced onion and serrano pepper; sauté for about 2 minutes until softened.
  2. Add chicken thighs in an even layer and cook until slightly browned.
  3. Stir in garlic, ginger, curry powder, and other spices; cook for another minute.
  4. Pour in crushed tomatoes and mix well.
