  • 1 large zucchini, grated or sliced
  • ½ yellow onion, diced
  • 1 pint grape tomatoes
  • 1½ cups basmati rice (uncooked)
  • 3 cups chicken stock
  • ¼ cup crumbled feta cheese
  • 2 tablespoons Greek seasoning
  • 2 teaspoons smoked paprika
  • 1 teaspoon seasoning salt
  • ½ teaspoon turmeric
  • ¼½ teaspoon cayenne pepper (to taste)
  • 1 medium red onion, thinly sliced
  • ¾ cup red wine vinegar (or apple cider vinegar)
  • 2 teaspoons sugar
  • 2 teaspoons kosher salt
  • Additional feta cheese
  • Pickled red onions
  • Tzatziki sauce (store-bought)
  • Toom garlic dip
  • Fresh parsley
  • Warm pita bread

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a casserole dish, combine diced chicken and half of the paprika mixture with Greek seasoning.
  3. Layer uncooked rice, zucchini slices, and grape tomatoes.
  4. Whisk chicken stock with remaining spices and pour over the layers.
  5. Top with feta cheese and lemon wedges.
  6. Cover with foil and bake for 40 minutes; remove foil and bake an additional 10–20 minutes until rice is tender.
