  • 23 TBSP chopped jalapeño pepper
  • 2 TBSP chopped red bell pepper (optional)
  • 1/4 cup smoky chipotle aioli
  • 1/2 cup plain Greek yogurt
  • 1/2 cup all-natural mayo
  • 12 chipotle peppers in adobo
  • 1 TBSP lemon juice
  • 1 tsp Sriracha chili sauce
  • 1 tsp parsley
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Instructions

  1. Prepare the chipotle aioli by blending the mayonnaise, Greek yogurt, chipotle peppers, Sriracha, garlic powder, parsley, lemon juice, and salt in a food processor until smooth.
  2. Clean, peel, and cube the sweet potatoes. Boil them in salted water for about 6–10 minutes until fork-tender.
  3. Drain the sweet potatoes and gently toss with the smoky chipotle aioli.
  4. Fold in diced red bell pepper and top with cilantro, paprika, and additional salt if desired.
  5. Serve warm or chilled; enjoy fresh or store leftovers in an airtight container.
