- 2–3 TBSP chopped jalapeño pepper
- 2 TBSP chopped red bell pepper (optional)
- 1/4 cup smoky chipotle aioli
- 1/2 cup plain Greek yogurt
- 1/2 cup all-natural mayo
- 1–2 chipotle peppers in adobo
- 1 TBSP lemon juice
- 1 tsp Sriracha chili sauce
- 1 tsp parsley
- 1/2 tsp garlic powder
- 1/4 tsp salt
Instructions
- Prepare the chipotle aioli by blending the mayonnaise, Greek yogurt, chipotle peppers, Sriracha, garlic powder, parsley, lemon juice, and salt in a food processor until smooth.
- Clean, peel, and cube the sweet potatoes. Boil them in salted water for about 6–10 minutes until fork-tender.
