  • ¼ cup + 2 tablespoons mayonnaise
  • ½ teaspoon Dijon mustard
  • 34 teaspoons pickle juice (try bread & butter)
  • Paprika (for garnish)
  • Fresh dill leaves or chives (for garnish)

Instructions

  1. Peel hard-boiled eggs and cut in half lengthwise. Remove yolks and place in a mixing bowl; arrange egg whites on a serving platter.
  2. Mash yolks until fine, then mix in mayonnaise, Dijon mustard, pickle juice, salt, and pepper until smooth.
  3. Adjust seasoning as desired. Spoon or pipe the filling back into the egg white halves.
  4. Garnish with paprika and fresh herbs. Serve immediately or chill before serving.
