  • 1 ½ lbs lean ground beef (or beef/pork blend)
  • 1 cup diced onion
  • ¾ cup bread crumbs (or panko)
  • ⅓ cup milk (or broth)
  • 2 eggs
  • 1 tsp tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine the ground beef, diced onion, bread crumbs, milk, eggs, tomato paste, garlic powder, onion powder, salt, and black pepper. Mix until just combined.
  3. Shape the mixture into a loaf or pack into a greased loaf pan.
  4. Bake uncovered for 40 minutes. Meanwhile, mix ketchup and vinegar; spread over the meatloaf after the initial bake. Return to the oven for another 10 minutes or until cooked through.
  5. Let rest for at least 10 minutes before slicing and serving.
