  • 1 pound salmon fillets (or preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper (sliced)
  • 1 serrano pepper (sliced)
  • ½ cup chopped cilantro
  • 2 carrots (sliced)
  • 6 garlic cloves (halved)
  • 1 tablespoon tomato paste
  • spices: sweet paprika
  • hot paprika
  • salt
  • cumin
  • turmeric

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add sliced vegetables and sauté for 2–3 minutes.
  2. Stir in spices and tomato paste; cook for another 2–3 minutes.
  3. Add half of the cilantro and water; cover and simmer for 12–15 minutes until veggies are tender.
  4. Lightly season the salmon with salt and nestle into the sauce; cover three-fourths of the fillets with sauce.
  5. Cook on low heat for 20–25 minutes, spooning sauce over the fish halfway through.
  6. Serve garnished with lemon slices.
