  • ½ cup vegan butter, melted
  • ½ cup + 2 tablespoons pure maple syrup
  • 2 teaspoons vanilla extract
  • 1¾ cups gluten-free flour
  • ⅛ teaspoon pink Himalayan salt
  • ½ cup mini dairy-free chocolate chips
  • 2½ cups non-dairy vanilla ice cream

Instructions

  1. Line a rimmed baking sheet with parchment paper.
  2. In a bowl or stand mixer, combine the flax egg, melted vegan butter, maple syrup, and vanilla.
  3. Mix in gluten-free flour and salt until a soft dough forms.
  4. Fold in chocolate chips evenly.
  5. Spread the dough on the baking sheet between parchment paper to about ¼ inch thick; freeze for at least 40 minutes.
  6. Cut the frozen dough into two equal rectangles.
  7. Soften ice cream slightly; spread it on one rectangle and top with the other.
  8. Freeze again for at least 4 hours or overnight until set.
  9. Slice into sandwiches and enjoy!
