  • 1 cup Cottage Cheese (full-fat or low-fat)
  • 9 large Eggs
  • 1/3 cup Feta Cheese
  • 1 cup Baby Spinach
  • 1/2 cup Sundried Tomatoes (dry)
  • 1/3 cup Grated Cheddar Cheese (or mozzarella)
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Ground Pepper
  • 1 teaspoon Dried Oregano
  • 1/4 teaspoon Garlic Powder

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a 12-inch pie plate skillet with olive oil.
  2. Chop the baby spinach and set aside.
