- 3-pound head of cauliflower
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 3/4 cup grated Gruyère cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup fresh bread crumbs
Instructions
- Preheat the oven to 375°F. Grease an 8 x 11 x 2-inch casserole dish.
- Steam or boil cauliflower florets in salted water for about 5-6 minutes until tender but firm; drain well.
- In a medium saucepan, melt butter over medium heat. Whisk in flour and cook until tan brown, then gradually add warm milk until thickened.
- Stir in thyme, nutmeg, salt, pepper, and half of the Gruyère until melted.
- Layer half of the cheese sauce in the casserole dish, add cauliflower, then top with remaining sauce. Sprinkle breadcrumbs and remaining cheese on top.
