  • 1 medium Onion
  • 3 cloves Garlic
  • 1 tablespoon Minced Ginger
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Garam Masala
  • 1 teaspoon Mild Chili Powder
  • 1 teaspoon Ground Turmeric
  • Salt to taste
  • 1 teaspoon White Pepper
  • 200 grams Tomato Purée
  • 200 grams Full-fat Plain Yogurt
  • 200 ml Coconut Cream
  • 100 ml Double Cream
  • 50 grams Ground Almonds (optional)
  • 1 tablespoon Sugar (optional)
  • 1 bunch Fresh Coriander for garnish

Instructions

  1. Prepare ingredients: chop onion, mince garlic and ginger, cut chicken into bite-sized pieces.
  2. In a heavy-bottomed pan, heat oil over medium heat. Sauté onion until golden brown; add garlic and ginger until fragrant.
  3. Add chicken; cook until no longer pink (5–7 minutes). Stir occasionally.
  4. Mix in spices and cook for an additional few minutes.
  5. Stir in tomato purée, yogurt, and coconut cream; simmer on low heat for about 10 minutes.
  6. Incorporate double cream before serving. Garnish with fresh coriander.
