- 500 grams Chicken Breasts
- 1 medium Onion
- 3 cloves Garlic
- 1 tablespoon Minced Ginger
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Garam Masala
- 1 teaspoon Mild Chili Powder
- 1 teaspoon Ground Turmeric
- Salt to taste
- 1 teaspoon White Pepper
- 200 grams Tomato Purée
- 200 grams Full-fat Plain Yogurt
- 200 ml Coconut Cream
- 100 ml Double Cream
- 50 grams Ground Almonds (optional)
- 1 tablespoon Sugar (optional)
- 1 bunch Fresh Coriander for garnish
Instructions
- Prepare ingredients: chop onion, mince garlic and ginger, cut chicken into bite-sized pieces.
- In a heavy-bottomed pan, heat oil over medium heat. Sauté onion until golden brown; add garlic and ginger until fragrant.
- Add chicken; cook until no longer pink (5–7 minutes). Stir occasionally.
- Mix in spices and cook for an additional few minutes.
- Stir in tomato purée, yogurt, and coconut cream; simmer on low heat for about 10 minutes.
- Incorporate double cream before serving. Garnish with fresh coriander.
