  • 2 large chicken breasts (2 pounds total), sliced into thin cutlets
  • Kosher salt and coarsely ground pepper
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 small shallot, minced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1 cup half and half
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon pepper seasoning

Instructions

  1. Pat the chicken cutlets dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes on each side until cooked through (internal temperature of 165°F). Remove from the skillet and set aside.
  3. In the same skillet, melt butter over medium-low heat. Sauté shallots until softened, then add garlic and cook briefly.
  4. Stir in flour and cook for about 2 minutes. Gradually add chicken broth, stirring continuously until smooth.
  5. Add half and half, lemon juice, and lemon pepper seasoning; bring to a boil then simmer until slightly thickened.
