  • 6 oz pasta (small shells or your choice)
  • 1 cup heavy cream
  • 1/2 to 1 cup grated Parmesan cheese
  • 2.5 to 3 cups fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken, season with Italian seasoning, salt, and pepper, cooking until browned (4–5 minutes).
  2. Stir in onions, carrots, celery, sundried tomatoes, and garlic; cook until translucent (3–4 minutes).
  3. Sprinkle flour over the mix and stir well. If using tomato paste, add it now.
  4. Gradually whisk in chicken broth until smooth; deglaze the pot.
  5. Bring to a boil, add pasta and another teaspoon of Italian seasoning. Cover and simmer on low for about 20 minutes.
  6. Stir in cream, spinach, and Parmesan cheese; simmer for an additional 5 minutes.
  7. Adjust seasoning before serving.
