  • 8 ounces uncooked fettuccine or linguine
  • 1 tablespoon butter
  • 1/2 tablespoon olive oil
  • 8 ounces cremini mushrooms (sliced)
  • 2 cloves garlic (minced)
  • 1/3 cup dry white wine
  • 1/4 teaspoon Italian seasoning
  • 1 teaspoon lemon juice
  • 1 teaspoon flour
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream
  • Salt & pepper (to taste)
  • Fresh parsley and grated Parmesan cheese (optional)

Instructions

  1. Boil salted water in a large pot and cook pasta until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet over medium-high heat, melt butter with olive oil. Sauté sliced mushrooms and minced garlic for about 5 minutes until browned.
  3. Remove mushrooms and add white wine, Italian seasoning, lemon juice, flour, and Dijon mustard to the skillet. Stir until smooth.
  4. Gradually add heavy cream and simmer until slightly thickened.
  5. Return mushrooms to the skillet, combine well, and season with salt and pepper.
  6. Toss cooked pasta with the creamy mushroom sauce. Garnish with parsley and Parmesan before serving.
