- 1 lb chicken breast, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- ½ cup chicken broth (or reserved pasta water)
- 2 tablespoons olive oil
- Fresh spinach or kale (optional)
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- In a skillet, heat olive oil over medium heat and cook the seasoned chicken until golden brown and cooked through (about 6-8 minutes). Remove and set aside.
- In the same skillet, sauté garlic for one minute before adding ricotta, Parmesan, chicken broth, and optional heavy cream. Stir until smooth; add seasonings.
- Combine the cooked chicken and drained pasta with the sauce. If too thick, add reserved pasta water gradually.
