  • 2 cups chicken broth

  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a large skillet over medium-high heat, sear the chicken for about 4-5 minutes per side until golden brown; then set aside.
  3. In a medium saucepan, bring chicken broth and salt to a boil. Stir in rice, cover, and let simmer on low for 15-18 minutes until tender.
  4. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour and cook until lightly golden.
  5. Gradually add milk and broth while whisking continuously until smooth; stir in garlic powder, thyme, cheddar cheese, and Parmesan until thickened.
  6. Return chicken to the skillet and spoon sauce over it; cover and simmer on low for about 10 minutes.
  7. Serve over fluffy rice and garnish with parsley.
