  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Olive oil
  • Butter
  • Flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon thyme
  • Salt
  • Black pepper

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. In a large skillet over medium-high heat, heat olive oil and sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  3. In a medium saucepan, bring chicken broth and salt to a boil. Add rice; reduce heat, cover, and simmer for 15-18 minutes until tender.
  4. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour for 1-2 minutes until golden.
  5. Gradually add milk and chicken broth while whisking to create a smooth sauce. Stir in garlic powder, thyme, cheddar cheese, and Parmesan; cook until thickened.
  6. Return chicken to skillet; spoon sauce over it and simmer gently on low heat for 10 minutes.
  7. Serve over cooked rice with fresh parsley garnish.
