Ingredients

  • 1 cup long-grain rice (white or brown)
  • 2 cups vegetable broth or water
  • 1 tablespoon vegetable oil
  • 1 cup shiitake mushrooms, sliced
  • 2 cups kale, stems removed
  • 1 medium carrot, diced
  • 1 cup snap peas, trimmed
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil

Instructions

  1. Rinse the rice under cold water until clear. Cook with vegetable broth in a pot: bring to boil, cover, and simmer for 15–18 minutes.
  2. While the rice cooks, prepare the vegetables.
  3. In a skillet or wok, heat vegetable oil over medium-high heat. Sauté shiitake mushrooms for 4–5 minutes until golden. Remove and set aside.
  4. In the same pan, sauté kale for 2–3 minutes until crispy. Set aside with mushrooms.
  5. Add carrots and snap peas to the skillet; sauté for another 3–4 minutes until tender-crisp. Stir in garlic and cook for an additional minute.
  6. Combine cooked rice with all sautéed ingredients in the skillet. Mix in soy sauce and sesame oil; season to taste.
  7. Cook together for another 2–3 minutes before serving hot.
