  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup duck fat (or olive oil)
  • 1 whole head garlic
  • 1 tablespoon finely chopped fresh rosemary
  • Flaky sea salt for finishing

Instructions

  1. Preheat the oven to 450°F and place a large roasting pan inside.
  2. Rinse potatoes under cold water. Boil in a large stock pot with water, kosher salt, and baking soda until fork-tender (about 25 minutes).
  3. Drain and dry the potatoes in a colander.
