Ingredients
- ¾ cup butter
- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1½ cups flour
- 2 cups graham crackers (finely crushed)
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp baking powder
- For frosting: 8 oz cream cheese
- ½ cup graham crackers (finely crushed)
- 8 oz butter
- 2½ cups powdered sugar
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a mixing bowl, cream together butter, granulated sugar, and brown sugar until fluffy. Beat in eggs and vanilla until combined.
- In another bowl, whisk together flour, salt, baking soda, and baking powder. Gradually add this mixture to the wet ingredients.
- Stir in crushed graham crackers until well combined.
- Using a cookie scoop, portion dough and roll in remaining graham crackers before placing on the baking sheets. Flatten slightly.
- Bake for 8–10 minutes or until golden around the edges.
- Cool on the sheet for 5 minutes before transferring to a wire rack to cool completely before frosting.
