  • 1 head of cabbage (about 8 cups), thinly sliced
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1/2 cup coconut aminos
  • 1 tablespoon rice vinegar
  • 1 tablespoon avocado oil
  • 2 teaspoons sesame oil
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup shredded carrot
  • Salt & pepper, to taste

Instructions

  1. In a small bowl, whisk together coconut aminos, rice vinegar, sesame oil, and crushed red pepper flakes to prepare the sauce.
  2. Heat avocado oil in a large skillet over medium-high heat until shimmering.
  3. Add chopped onion and cook for about 5 minutes until translucent.
  4. Stir in minced garlic and grated ginger; cook for another minute until fragrant.
  5. Add ground beef to the skillet; break it up as it cooks and brown for about 5 minutes.
  6. Incorporate sliced cabbage and shredded carrots into the skillet along with the sauce; cook while stirring until cabbage wilts and sauce thickens (about 5 minutes).
  7. Season to taste with salt and pepper before serving.
