  • ¾ pound chicken breasts (cut into small pieces)
  • 4 cups cooked rice (cooled)
  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 2 large eggs
  • 5 tablespoons low-sodium soy sauce
  • 1½ teaspoons sesame oil
  • 4 tablespoons butter

Instructions

  1. Heat a wok or large skillet over medium-high heat and add 1 tablespoon of neutral oil.
  2. Add the chicken, season with salt and pepper, and stir-fry for about 5-7 minutes until fully cooked. Remove from the pan.
  3. In the same pan, add another tablespoon of oil and sauté the onions and mixed vegetables until the onions are translucent.
  4. Push the vegetables to one side, then add butter and scramble in the eggs until cooked.
  5. Stir everything together, then add the cooled rice and pour in soy sauce and lemon juice. Mix well.
  6. Cook for a few more minutes until heated through; drizzle with sesame oil before serving.
