Ingredients
- ¾ pound chicken breasts (cut into small pieces)
- 4 cups cooked rice (cooled)
- ½ cup diced white onion
- 1 cup frozen mixed vegetables (peas and carrots)
- 2 large eggs
- 5 tablespoons low-sodium soy sauce
- 1½ teaspoons sesame oil
- 4 tablespoons butter
Instructions
- Heat a wok or large skillet over medium-high heat and add 1 tablespoon of neutral oil.
- Add the chicken, season with salt and pepper, and stir-fry for about 5-7 minutes until fully cooked. Remove from the pan.
- In the same pan, add another tablespoon of oil and sauté the onions and mixed vegetables until the onions are translucent.
- Push the vegetables to one side, then add butter and scramble in the eggs until cooked.
- Stir everything together, then add the cooled rice and pour in soy sauce and lemon juice. Mix well.
- Cook for a few more minutes until heated through; drizzle with sesame oil before serving.
