Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1/2 cup brown sugar
  • 2 teaspoons sesame oil
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 2 egg whites
  • Vegetable oil for frying

Instructions

  1. In a bowl, whisk together soy sauce, rice vinegar, brown sugar, cornstarch, water, and sesame oil for the sauce. Set aside.
  2. In another bowl, mix cornstarch, flour, egg whites, and cold seltzer until combined. Coat chicken pieces in this batter.
  3. Heat vegetable oil to 350°F (175°C) in a pot and fry the chicken until golden brown. Drain on a wire rack or paper towels.
  4. Sauté minced garlic and crushed red pepper in sesame oil over medium heat until fragrant.
  5. Add the prepared sauce and fried chicken to the skillet; toss quickly to coat.
  6. Serve immediately garnished with sesame seeds if desired.
