Ingredients
- 12 jumbo pasta shells
- 1½ cups ricotta cheese
- 1 cup shredded mozzarella cheese (plus extra for topping)
- ½ cup grated parmesan cheese
- 1 large egg
- 1 cup fresh spinach (or ½ cup frozen spinach, thawed and drained)
- 2 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook jumbo pasta shells in salted boiling water until al dente; drain and set aside.
- In a skillet, heat olive oil and sauté minced garlic until fragrant, then add spinach until wilted. Season with salt and pepper.
- In a mixing bowl, combine ricotta, mozzarella, parmesan, egg, nutmeg (if using), and sautéed spinach mixture; mix well.
- Spread marinara sauce on the bottom of a baking dish. Stuff each shell with the filling and place seam-side up in the dish.
- Pour remaining marinara sauce over the shells and sprinkle with extra mozzarella cheese.
- Cover with aluminum foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until bubbly.
