  • 34 garlic cloves (minced)
  • 4 cups vegetable stock
  • 1 large yellow potato (peeled and grated)
  • 1 bay leaf
  • ½ teaspoon thyme (dried)
  • 1 can (19 ounces) white beans (drained and rinsed)
  • 1012 ounces spinach (chopped, tough stems removed)
  • 1 tablespoon Italian parsley (fresh, minced)
  • 1 tablespoon lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large stockpot over medium heat. Sauté onion and celery for about 5 minutes until softened.
  2. Stir in garlic and cook for an additional minute.
  3. Add vegetable stock, grated potato, bay leaf, and thyme; bring to a boil.
  4. Lower heat to medium; cover and simmer for about 15 minutes until the potato is tender.
  5. Mix in white beans and continue simmering for another 5 minutes.
  6. Stir in chopped spinach; cook for one more minute until wilted.
  7. Remove from heat, add lemon juice and parsley, then season with salt and pepper to taste.
