- 1 can (19 ounces) white beans (drained and rinsed)
- 10–12 ounces spinach (chopped, tough stems removed)
- 1 tablespoon Italian parsley (fresh, minced)
- 1 tablespoon lemon juice (freshly squeezed)
- Salt and pepper to taste
Instructions
- Heat olive oil in a large stockpot over medium heat. Sauté onion and celery for about 5 minutes until softened.
- Stir in garlic and cook for an additional minute.
- Add vegetable stock, grated potato, bay leaf, and thyme; bring to a boil.
- Lower heat to medium; cover and simmer for about 15 minutes until the potato is tender.
