  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 800 g (4 cups) boiled and cooled long-grain rice
  • 1/2 tbsp sesame oil
  • 2 eggs
  • 2 tbsp dark soy sauce
  • 1/4 tsp salt
  • 1/4 tsp garlic salt
  • 1 tbsp lemon juice
  • 1/2 bunch of spring onions, chopped

Instructions

  1. Heat 1 tbsp vegetable oil in a large wok over medium heat. Sauté the diced onion for about 5 minutes until soft.
  2. Add remaining oil and minced garlic; cook for an additional 30 seconds.
  3. Increase the heat to high and add the boiled rice, drizzling in sesame oil.
  4. Toss the mixture with a spatula to reheat evenly for about 5 minutes.
  5. Push rice aside and crack two eggs into the empty space; drizzle with soy sauce and scramble gently until slightly runny.
  6. Mix scrambled eggs into rice thoroughly.
  7. Season with remaining soy sauce, salt, garlic salt, and lemon juice; stir well.
  8. Serve hot, garnished with chopped spring onions.
