  • 3 tbsp unsalted butter (for frying)
  • 1/2 cup milk
  • 1 tsp almond extract (or vanilla)
  • 1 tsp cinnamon
  • Pinch nutmeg
  • Pinch salt

Instructions

  1. Clean and trim chicken thighs, then marinate in buttermilk with salt and white pepper for at least 30 minutes.
  2. Heat oil in a Dutch oven to 350°F.
  3. Mix flour and spices in a bowl for coating.
  4. Coat marinated chicken in the flour mix and fry until golden brown (about 7 minutes per side).
  5. In a saucepan, combine sauce ingredients and simmer until thickened.
  6. For French toast, whisk eggs, milk, almond extract, cinnamon, and nutmeg; dip brioche slices and fry until golden.
  7. Assemble the sandwich by layering fried chicken on French toast and drizzle with sauce.
