  • ½ cup demerara sugar

  2. Melt dark chocolate and butter in a heatproof bowl over simmering water; stir until smooth and mix in vanilla extract.
  3. In another bowl, whip eggs with caster and demerara sugars until fluffy.
  4. Sift together flour, cocoa powder, baking powder, salt, and chocolate chips.
  5. Fold melted chocolate mixture into whipped eggs gently; add dry ingredients until just combined.
  6. Scoop batter onto prepared tray; bake for 12-14 minutes until tops are crackly.
  7. Cool for about 10 minutes before transferring to wire rack.
