  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 tsp vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat oven to 160ºC (320ºF) with fan or 170ºC (338ºF) for conventional. Line a baking tray with parchment paper.
  2. Melt dark chocolate and butter together in a heatproof bowl over simmering water, stirring until smooth. Mix in vanilla extract.
  3. In another bowl, whisk eggs and sugars on high speed until light and fluffy, about 5 minutes.
  4. Sift together flour, cocoa powder, baking powder, and salt; add chocolate chips.
  5. Fold the melted chocolate mixture into the egg mixture gently to maintain airiness.
  6. Incorporate dry ingredients into the wet mixture using a spatula until just combined.
  7. Spoon tablespoons of batter onto the baking tray, spacing apart. Bake for 12-14 minutes until set with a crackly top.
  8. Cool for 10 minutes before transferring to a rack.
