  • 225 g dark chocolate (chopped)
  • 56 g butter
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat the oven to 160ºC (320ºF) for fan or 170ºC (338ºF) conventional.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water; stir in vanilla.
  3. In another bowl, whisk eggs with both sugars until fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt; fold dry ingredients into the wet mixture.
  5. Incorporate melted chocolate gently; add chocolate chips.
  6. Scoop tablespoons of batter onto a lined baking tray, leaving space between each.
  7. Bake for 12–14 minutes until set and crackly on top.
  8. Let cool before serving.
