  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar
  • 1 teaspoon vanilla extract
  • 85 g dark or milk chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until fully melted and combined, then mix in the vanilla extract.
  3. In another bowl, whisk together eggs and sugars using an electric hand whisk until light and fluffy (about 5 minutes).
  4. Sift together flour, cocoa powder, baking powder, and salt in a separate bowl; fold in chocolate chips.
  5. Gradually mix the melted chocolate into the egg mixture, then carefully fold in the dry ingredients until just combined.
  6. Scoop tablespoons of batter onto the prepared tray with space between each scoop. Bake for about 12–14 minutes, or until set with crackly tops.
  7. Allow to cool on the tray for about 10 minutes before transferring to a cooling rack.
