- 1 tablespoon olive oil
- 3 tablespoons butter (divided)
- 1/2 medium onion (chopped)
- 8 ounces cremini mushrooms (sliced)
- 3 cloves garlic (minced)
- 1/2 teaspoon Dijon mustard
- 1/4 cup chicken or vegetable broth
- 1/2 teaspoon lemon juice and zest of 1/2 lemon
- 1/2 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Boil salted water in a pot and cook the pasta al dente according to package directions.
- In a skillet over medium-high heat, combine olive oil and 1 tablespoon of butter. Add chopped onions and sliced mushrooms; sauté until golden brown, about 8-10 minutes.
- Stir in remaining butter, minced garlic, and Dijon mustard. Cook for one minute until fragrant.
- Pour in broth along with lemon juice and zest; let it bubble gently for one minute.
- Remove from heat; stir in parmesan cheese and parsley. Before draining the pasta, add two tablespoons of hot pasta water to the sauce.
- Toss cooked pasta with the sauce, season with salt and pepper, and serve immediately.
