Garlic Mushroom Pasta is a creamy, savory dish that combines earthy mushrooms with a luscious garlic butter sauce to create an irresistible meal in just 30 minutes.


Ingredients

  • 4 ounces uncooked pasta
  • 1 tablespoon olive oil
  • 3 tablespoons butter (divided)
  • 1/2 medium onion (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon Dijon mustard
  • 1/4 cup chicken or vegetable broth
  • 1/2 teaspoon lemon juice and zest of 1/2 lemon
  • 1/2 cup freshly grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a pot and cook the pasta al dente according to package directions.
  2. In a skillet over medium-high heat, combine olive oil and 1 tablespoon of butter. Add chopped onions and sliced mushrooms; sauté until golden brown, about 8-10 minutes.
  3. Stir in remaining butter, minced garlic, and Dijon mustard. Cook for one minute until fragrant.
  4. Pour in broth along with lemon juice and zest; let it bubble gently for one minute.
  5. Remove from heat; stir in parmesan cheese and parsley. Before draining the pasta, add two tablespoons of hot pasta water to the sauce.
  6. Toss cooked pasta with the sauce, season with salt and pepper, and serve immediately.
